&lt;ul&gt;
  &lt;li&gt;1lb (450g) plain white flour&lt;/li&gt;
  &lt;li&gt;1 level teaspoon baking soda / bicarbonate of soda&lt;/li&gt;
  &lt;li&gt;1 level teaspoon cream of tartar&lt;/li&gt;
  &lt;li&gt;Pinch Of Salt&lt;/li&gt;
  &lt;li&gt;4oz (115g) butter&lt;/li&gt;
  &lt;li&gt;4oz (115g) sugar&lt;/li&gt;
  &lt;li&gt;4oz (115g) Sultana's or rasins or currants&lt;/li&gt;
  &lt;li&gt;1 egg&lt;/li&gt;
  &lt;li&gt;1/2 pint (285ml) buttermilk&lt;/li&gt;
&lt;/ul&gt;
&lt;h2&gt;Directions&lt;/h2&gt;
&lt;ol&gt;
  &lt;li&gt;Preheat oven to (180°C), (350°F), (Gas Mark 4)&lt;/li&gt;
  &lt;li&gt;Sieve flour, soad, cream of tartar and salt into a bowl&lt;/li&gt;
  &lt;li&gt;Rub in butter lightly with finger tips until the mixture looks like bread crumbs&lt;/li&gt;
  &lt;li&gt;Add dried fruit and sugar then mix well&lt;/li&gt;
  &lt;li&gt;Beat egg in a seperate bowl and add buttermilk, mix well&lt;/li&gt;
  &lt;li&gt;Add to other ingredients and mix into a dough&lt;/li&gt;
  &lt;li&gt;Turn onto lightly floured board, knead and mould into a smooth round dough&lt;/li&gt;
  &lt;li&gt;Put into a greased baking tray and flatten to about 2/3 inch thick&lt;/li&gt;
  &lt;li&gt;Bake for 40 - 50 minutes, until bread is golden brown&lt;/li&gt;
  &lt;li&gt;Remove from oven and leave to cool&lt;/li&gt;
&lt;/ol&gt;
&lt;p&gt;Serving Suggestion : &lt;br&gt;
  With Butter &amp; Jam&lt;br&gt;
  Also nice when lightly toasted under grill, and butter spread on while hot.&lt;/p&gt;</content>

  &lt;li&gt;6 eggs, separated&lt;/li&gt;
  &lt;li&gt;1 heaping cup sugar&lt;/li&gt;
  &lt;li&gt;1 1/4 cup strong black coffee&lt;/li&gt;
  &lt;li&gt;1 1/2oz plain gelatin&lt;/li&gt;
  &lt;li&gt;1 1/4 cup heavy cream&lt;/li&gt;
  &lt;li&gt;7 teaspoons Irish Whisky&lt;/li&gt;
  &lt;li&gt;Finely chopped walnuts (optional)&lt;/li&gt;
  &lt;li&gt;Whiskey flavored whipped cream (optional)&lt;/li&gt;
&lt;/ul&gt;
&lt;h2&gt;Directions&lt;/h2&gt;
&lt;ol&gt;
  &lt;li&gt;In a pyrex bowl, cream the egg yolks with sugar&lt;/li&gt;
  &lt;li&gt;Heat the coffee and dissolve the gelatin in it, then add it to the egg mixture&lt;/li&gt;
  &lt;li&gt;Beat the mixture well&lt;/li&gt;
  &lt;li&gt;Place the bowl over a pan of boiling water and beat / stir constatnly until the mixture begins to thicken&lt;/li&gt;
  &lt;li&gt;Remove from heat and allow to cool&lt;/li&gt;
  &lt;li&gt;When the bowl has cooled a little, put it over cracked ice and continue to stir&lt;/li&gt;
  &lt;li&gt;When the mixture is almost set, whip the cream and fold in the whiskey, then fold in the stiffly beaten egg whites.&lt;/li&gt;
  &lt;li&gt;Pour into dessert dishes and let set&lt;/li&gt;
  &lt;li&gt;Garnish with additonal whipped cream with whiskey folded in &amp; finely chopped walnuts&lt;/li&gt;

  &lt;li&gt;1/4 Teaspoon Baking Powder&lt;/li&gt;
  &lt;li&gt;1/2 Pound (225g) Sultanas&lt;/li&gt;
  &lt;li&gt;1/2 Pound (225g) Currants&lt;/li&gt;
  &lt;li&gt;2oz (60g) Cherries&lt;/li&gt;
  &lt;li&gt;2oz (60g) Chopped Almonds&lt;/li&gt;
  &lt;li&gt;2 Tablespoons irish Whiskey&lt;/li&gt;
&lt;/ul&gt;
&lt;h2&gt;Directions&lt;/h2&gt;
&lt;ol&gt;
  &lt;li&gt;Put an egg and sugar in a bowl and mix until soft and creamy&lt;/li&gt;
  &lt;li&gt;Add lemon ring and mix well&lt;/li&gt;
  &lt;li&gt;Add the other eggs, one at a time, mix well to thicken mixture&lt;/li&gt;
  &lt;li&gt;Sift flour and baking powder into mixture and fold lightly&lt;/li&gt;
  &lt;li&gt;Add in fruitand almonds, mix well&lt;/li&gt;
  &lt;li&gt;Turn into a greased cake tin, decorate top with almonds&lt;/li&gt;
  &lt;li&gt;Bake for 2 1/2 hours in a moderate oven, until the top is golden and the cake is shrinking from the sides&lt;/li&gt;
  &lt;li&gt;Remove from oven and coat with whiskey&lt;/li&gt;
  &lt;li&gt;Leave to cool for 10 minutes, turn out on a wire rack, leave to cool fully&lt;/li&gt;

  &lt;li&gt;Pour in freshly made coffee, filling the glass to a half inch from the top&lt;/li&gt;
  &lt;li&gt;Stir until the sugar is dissolved&lt;/li&gt;
  &lt;li&gt;Turn a spoon upsidedown and put tip into coffee, let the cream fall into the glass over the back of the spoon&lt;/li&gt;
  &lt;li&gt;Fill to the top of glass and do not stir, serve immediately&lt;/li&gt;
